EAT truffles were a happy accident. As a child my family called me Carolina chocolate. I LOVED anything chocolate and this trend continued through my early adulthood and stopped abruptly the day my daughter was born. It took years for my sweet tooth to return and even now, I prefer bitter dark chocolate or tart sorbet.
I also have a strong affection for Costa Rica and have been visiting the country annually for the past four years.
In 2017, I was introduced to a very different chocolate: raw minimally processed cacao. The taste was as dynamic as good wine. I could feel the tingles of vasodilation as the plant food moved through my body. After participating in a cacao ceremony and meeting the beautiful people who make this raw cacao, I asked if they had a way to share it with people in the States. Now, we do!
